In Peru, talking about gastronomy means talking about one of the country’s greatest assets. This is based on several factors that converge to offer an incomparable gastronomic menu: the ecological diversity of the territory that facilitates an infinity of exquisite ingredients; the influence of cultures from four continents, added to the preserved ancestral techniques. The north of Peru has a unique cuisine in which the fruits of the dry forest, the ocean and hands inherited from an ancestral tradition have developed what many consider to be one of the best cuisines in Peru.

On this visit, you will start discovering a local market and the ingredients that give flavor to the gastronomy of Lambayeque. This tour will be accompanied by a local chef who will introduce you to the dry forest and the sea that characterizes the Lambayeque region, as well as the nearby regions of the highlands and jungle of northern Peru.

Afterwards, with these ingredients, you will attend a workshop, where the chef will show you how to prepare two typical dishes of the region. You will discover techniques for the preparation of these dishes, to later share a tasting of what has been prepared.

With this visit, get ready to discover the secrets of Northern Peruvian gastronomy.

And do not miss our blog about Sustainable Gastronomy to get to know our approach to this activity.

The chefs

The Chefs of the Lambayeque region have the particularity of having grown up in an environment of two ecosystems: the sea and the dry forest. On the other hand, Lambayeque is located in a strategic location through which the products of the highlands and jungle of northern Peru pass. These particularities provide a diversity of inputs that allow us to have an exquisite menu of regional dishes, which stand out nationally and internationally. These Chefs will be in charge of this discovery of Lambayeque’s gastronomy.

We believe that the best way to learn about gastronomy is to discover it from the inside, and for this a first destination is a visit to the markets, as they are the meeting point of the people, which also in the case of Lambayeque allows to find inputs from the coast, highlands and even the jungle. Another aspect is to learn about the preparation techniques, many of which have an ancestral background, such as the preservation of fish through “salting” or “drying”. That is why, in this visit, we propose to know Lambayeque from its textures, flavors, smells and from the hand of its creators.
